Coconut Bird Nests

These sweet little nests are perfect for spring, and can be filled with Easter candy that will probably be making its way into your home in obscene amounts. Toddlers and big kids can definitely help with this edible project. Drop some off at the easter open house, and keep a tray for an afternoon treat little bunnies can munch on.

2 1/4 cups coconut flakes
1 egg white
Colorful egg-shaped candies*
Cupcake tin
Non-stick spray

Mix all ingredients together [except the candies] in a large bowl. Spray inside of cupcake tin. Shape 'nests' into the cupcake tins. Indent each nest with a spoon.
Bake at 350 for 15 minutes.** After they have cooled, place a few 'eggs' into each nest.

*we used malted eggs, my absolute least-favorite candy, but most realistic looking. So use malted if realism is the look you are going for. Otherwise, any candy will do, and you probably have a ton of jelly beans.

** I baked mine for longer b/c I wanted the brown nest color, but they really shouldn't be as dark as the ones I made- unless you are into ultra-crunchy, which I kinda am, but nobody else 'round these parts really is.

*RockStar* Tip
You can also form the shapes in the palm of your hand, instead of forming the nests in a cupcake tin.
