Over the Rainbow Cupcakes

Click your heels three times and you will be transported to the End of the Rainbow, surrounded by cupcakes. Well, not really, but you could be in a short time, because these treats are a snap to make. After you pop these out of the oven, be sure to head over to the Redford Theatre today, where the historical landmark is hosting two showings of the iconic film, "Wizard of Oz."

Ingredients:
1 Box of Confetti Cake Mix <or> see recipe below
Cupcake Tins
Cupcake Liners
Sprinkles
Frosting
Decorative Picks 
Make cupcakes according to instructions on box or use recipe below. Let cool. Frost cupcakes with icing, then cover with rainbow sprinkles. Place a Ruby Slipper (or other iconic item) into each cupcake. Now click your heels three times- or hop into a plane, train or automobile- to catch Dorothy & the Gang on the Big Screen at the illustrious Redford Theatre. 
2 3/4 cups flour
3 tsp baking powder
1/2 tsp salt
3/4 cup butter
1 2/3 cups sugar
5 egg whites
2 1/2 tsp vanilla
1 1/4 cups milk

Heat oven to 350 degrees. Arrange liners in baking tins. Mix flour baking powder and salt together. In separate bowl, mix butter for 30 seconds using electric mixer. Add sugar, mixing for 2 minutes. add egg whites, mix. Add vanilla. Alternately put flour mixture and milk into bowl until blended.Fill each liner with batter until 1/2 full, add spoonful of sprinkles, then top with batter, filling liners about 3/4 of the way.
